Pappy Legba, Cerise Saison Regal. As 'Pappy Legba' is the guardian to the crossroads, this special Belgian beer releases the first Friday of each New Year. Brewed with just a touch of flaked maize for a seductively creamy texture, post fermentation this special Belgian is aged on a grip of pie cherries, lending it more of a Kriek profile rather than Saison. 13.0% ABV; rare.

Mad Ear, Naked Bière de Garde. Grist: Barley, Oats +Rye, 35 IBUs of Styrian + Saaz, Mad Extended Boil for Mad Red Color, No Spices, Free-Rise Fermentation with Proprietary Yeast, Pair with Truffled Foie Gras, Cassoulet, Rosemary Lamb. 8.1% ABV, 35 IBUs; rare.

Three Flowers, Saison Vieille. An Earth focused seasonal. We age this 'orange hued' ale on the tips of three secret varieties of flowers. We promised not to give up our secret on this beer, because it's just too good! Authentically Belgian and only available as the weather warms and flowers begin to bloom. 7.0% ABV; rare.

Le Capitaine, Golden Saison Regal. A Petite Buddha Saison brewed with an absurd amount of pumpkin, candied endive, cacao nibs, and Buddha's Hand. Fermented with various strains of Brettanomyces along with Saison yeast then aged on Chardonnay barrels, the resulting beer has a light body and very softly spoken complexities. 10.4% ABV; rare.

Menacing Kumquat, Fresh Harvest Saison. Grist: Golden Naked Oats and Pilsen, Fresh Florida ‘Winter Harvest’ Kumquats and Grains of Paradise, Free-Rise fermentation with a Proprietary Yeast Blend, Pair with Pound Cake or Pad Thai. 6.4% ABV, 45 IBUs of Citra Hops; rare.

You Never Even Call Me by My Name, Black Saison Regal. This recipe is an intimidating jet black color. Flavored with a blend of sarsaparilla, sassafras, coriander, hibiscus and cumin to create a perfect balance of spiciness, sweetness, and acidity. 12.2% ABV; rare.

Hopped Toddy, Saison de Miel. Inspired by chilling winter nights, this hopped braggot is made with 48% honey and 52% grains. The recipe was crafted with fresh ginger, lemon zest, Black & Orange Pekoe tea, then aged on bourbon barrels. We brew a single batch annually and cellar it for a minimum of 9 months. 13.8% ABV; very rare.

Saison Man, Saison Provisional. A 'Pre-Industry Session Saison', brewed with pilsen, rye, flaked wheat, flaked oats, spelt, coriander and grains of paradise. Fermented with a blend of Farmhouse yeast and Brettanomyces, dry hopped, and aged in Chardonnay barrels. 4.9% ABV.

TPS Report, Wild Brettanomyces Wit with Roses Petals. GABF GOLD MEDAL 2009, Bronze 2012. Brewed with flaked oats, flaked wheat, tangerine zest, and lemon zests. Fermented 100% with a very rare variety of Brettanomyces this beer is exceedingly aromatic. Aged on French Oak Chardonnay Barrels and roses petals for complex maturity and sweet earthy notes. 4.8% ABV; pH 5.0; rare.

Oh Face! Saison Provisional. The malt bill of this late 1800's inspired Belgian ale consists of a combination of barley, oats, wheat, rye and spelt. For the fermentation we use a blend of Saison yeast with three older Brettanomyces strains. This beer aged on lavender French oak Chardonnay barrels. 6.5% ABV; pH 5.2; rare.

Red Swingline, IPA Primitif. DRAFT Magazine's Top 25 Beers in the World for 2013! A wild and sour session IPA. Brewed with three heavily fruity hops, coriander, and tangerine zest the profile is definitely American in focus. Aged in French Oak Chardonnay barrels with souring Lactobacillus, funky Brettanomyces yeast, and dry-hopped in each individual barrel. This beer is a definite wow moment. 4.1% ABV; pH 3.6; 100 IBUs; rare.

Damn, it Feels Good to be a Gangsta', Black & Wild Ironic Sour. Grist: A Secret ‘Levity’ Blend of Dark Malts, Honey, Golden Raisins, Mustard Seed, Aged for long periods on Chardonnay barrels, Pair with Steak Tartare or an Umami-rich Truffle entree. 8.1% ABV; pH 3.4; rare.

The Flavor, Triple Cherry Dark Kriek. Brewed with dark malts, and Sumatran Coffee. Aged on French Oak barrels and toasted almonds with over a pound of pie cherries & sweet cherries per gallon of beer. 5.8% ABV; ph 2.8; extremely rare.

Brain of the Turtle, Petite Cerise. This beer is the second running on the barrels use to brew The Flavor. Aged on oaken barrels, Sumatran Coffee, almonds, and used cherries. Brain features a dark dried cherry skin tannin note and a very creamy character. 5.8% ABV; pH 2.8 extremely rare.

Seven Day, Golden Sour. Brewed with a first and second 'slims' process, a malt bill built with over 30% raw wheat, aged hops, Lactobacillus, and Brettanomyces. Both kettle and FV fermented, this beer never touches oak barrels. 5.0% ABV; pH 3.0; rare.

Koelorado, Spontaneous Golden Sour. Brewed with a first and second 'slims' process, a malt bill consisting of over 30% raw wheat, and aged hops. A 'first of its kind' beer to be produced in Colorado, in which we push the hot wort outside to our custom built coolship overnight allowing indigenous Colorado microbes to blow in and ferment the beer. Staying very strict to Belgian tradition, we only brew this beer during March and April when wild microbes are most favorable. This beer then ages for a full year on steam sterilized French oak Chardonnay barrels before bottling. 5.0% ABV; extremely rare.

Sunna Wit Bier, Distinct and delicate flaked wheat and oat beer. A noticeable citrus exists resulting from the addition of tangerine, lemon, lime zests, and corriander during the boil. Flo India Pale Ale, a staff and regulars favorite of our publik house. Brewed with a blend of eight hop varieties and seven world class malts this dry hopped ale combines both English and American brewing traditions. The resulting beer is driven by fruit and balanced by dry palate, a true treat for the bold fans of the hoppier side of beers. 6.4% ABV and 64 IBUs;

Awaken Chicory Coffee Stout. A dark, creamy, and surprisingly drinkable Dry Stout. As you would expect from the brewers at Trinity, this Stout is anything but mainstream. Starting the base recipe with ten malts and three hop varieties, we age the resulting dry stout on locally roasted earthy Sumatran coffee beans and Chicory to create balanced and pleasing bitter notes. 6.0% ABV;

Farmhouse Saison, a seasonally changing beer dictated by freshly available herbs, spices, fruits, grains, seeds, and vegetables. Adhering to the style's age old custom we completely change the recipe of this beer each time we brew it in an effort to push our talented Brewer's creativity to the limit! Depending on the time of the year we brew this beer from straw gold to jet black in color. Chocolate River, Imperial Stout. Just in time to keep you warm during the colder months of winter! It's body is huge, it's dark malt character is huge, it's hop profile is gigantic, and it's ABV is enormous. It's basically everything that you would expect from a noteworthy Imperial Stout,and more! We brew this beer with rich milk chocolate then age it on whole Madagascar Vanilla Beans and Dagoba Cacao Nibs. 11.0% ABV; extremely rare.

45th Parallel, Oregon-Style IPA. A completely new delivery for IPA, not to be confused with 'West Coast.' We've re-kindled our affection for this lovely ale inspired by fresh new ideas unique to brewers from the state of Oregon. This IPA recipe is hopped the entire way through with very progressive and extremely fruity American hops, then brought to a balance with a humble malt that reveals a delicately plucky caramel. Both very intense but extremely approachable, this beer reigns as our 'Ironic Masterpiece.'
7.5% ABV; 80 IBU's; extremely rare.

Elektrick Cukumbahh, Saison d'été. GABF GOLD MEDAL 2013. It's officially summer and cucumbers are coming into harvest. Cooling cukes are such a nice treat that we decided to make a Saison d'été with them. Adding a large amount of English cucumbers per barrel, and just enough lemon zest to lend an overall brightness to the beer, this recipe is quickly becoming legendary. 6.4% ABV; rare.

Super Juice Solution. Soured with Lactobacillus delbrueckii and complimented with heavily fruity American hops. We use a touch of coriander to reinforce the citrus theme of this beer. Although no fruit is used, this specialty IPA structure drinks refreshingly juicy and extremely session-able.

Farmhouse Walloon, Saison d'jardin. Inspired by the ancient and more authentic Saisons of southern Belgium. We gather the ingredients for this recipe from our own small Eco-region, and strictly only use ingredients from local farms and gardens. Each year we use a number of unique pumpkins and squashes along with a number of unpredictable ingredients that arrive with harvest to create the creamy and very drinkable indigenous interpretation of this Belgian style. Voted in the top 15 Saisons in the world in 2009 on ratebeer. 5.0% ABV; rare.
