Pappy Legba, Cerise Saison Regal. As 'Pappy Legba' is the guardian to the crossroads, this special Belgian beer releases the first Friday of each New Year. Brewed with just a touch of flaked maize for a seductively creamy texture, post fermentation this special Belgian is aged on a grip of pie cherries, lending it more of a Kriek profile rather than Saison. 13.0% ABV; rare.

Mr. Saison, Saison Vieille. Inspired by native ingredients we found during a local hike in Colorado, this beer won best of show in the "Beers Made by Walking" competition in 2012. Our use of amaranth grain imparts a toasty presence in the malt bill, mustard seed lends a nice spiciness to the beer that is balanced with a light citrus from lemon grass and an implied dried cherry essence from the use of rose hips. 5.6% ABV; rare.

Three Flowers, Saison Vieille. An Earth focused seasonal. We age this 'orange hued' ale on the tips of three secret varieties of flowers. We promised not to give up our secret on this beer, because it's just too good! Authentically Belgian and only available as the weather warms and flowers begin to bloom. 7.0% ABV; rare.

Le Capitaine, Golden Saison Regal. A Petite Buddha Saison brewed with an absurd amount of pumpkin, candied endive, cacao nibs, and Buddha's Hand. Fermented with various strains of Brettanomyces along with Saison yeast then aged on Chardonnay barrels, the resulting beer has a light body and very softly spoken complexities. 10.4% ABV; rare.

Accessibility Mode, Saison Printemps. Inspired by uberless cab rides in Portland Oregon during Craft Brewer's Conference, This spring Saison is brewed with enough jack-fruit to create a refreshingly acidic profile perfect for sipping on the patio. Grains of paradise are used in this recipe for a lightly spicy and dry finish. 6.4% ABV; rare.

The Menacing Strawberry, Farmhouse Fraise. Brewed with an absurd amount of fresh strawberries, this fruit bomb drinks lightly tart. We build an ultra creamy texture in this beer from the use of 2 secret vegetables. Notable pepper finishes the drink from our heavy hand with grains of paradise. 6.4% ABV; rare.

Rind & Pepperberry, Harvest Saison. Constructed with a balanced tart profile, we create with watermelon rind rather than bacteria. Whole black pepper berries balance the acidity of this beer, while the use of a wild Ale yeast adds light pineapple. 6.8% ABV; 26 IBUs; rare.

Elektrick Cukumbahh, Saison d'été. GABF GOLD MEDAL 2013. It's officially summer and cucumbers are coming into harvest. Cooling cukes are such a nice treat that we decided to make a Saison d'été with them. Adding a large amount of English cucumbers per barrel, and just enough lemon zest to lend an overall brightness to the beer, this recipe is quickly becoming legendary. 6.4% ABV; rare.

Saison Beams. A 'Co-Loveration' celebration between two brewers inspired by their mutual sincerity for Saisons, wild yeasts and an artisanal approach with unique ingredients. Inspired by tasting creatively designed drinks together during an epic 'FOBAB' trip to Chicago, this Saison features a ridiculous amount of rare yuzu fruit, grains of paradise, and fruity shiso herb. A 100% Brettanomyces Saison, we showcase naardenensis and farmhouse as our yeast choices. Aged in Chardonnay barrels, this beer develops a soft vanilla maturity along with a tannic and oaky dry finish. The two 'savant' Saison brewers, 7venth Sun and Trinity Brewing, have gone past the point of 'reality' with this recipe and into a realm of surrealistic insanity.
5.4% ABV; 70 IBUs; 3.8pH; extremely rare.

Sauvage Blanc. A 'Co-Loveration' celebration between two brewers inspired by their mutual sincerity for: Saison, wild yeasts, and an artisanal approach towards using unique ingredients. This recipe was structured from a 'Sauv' theme ... 30% Sauvignon Blanc must, 100% Nelson Sauvin hops, and aged in first run Sauvignon Blanc barrels. A 100% Brettanomyces Saison, naardenensis and farmhouse brett are the yeast choices. We use a light grains of paradise to this beer for dry drink-ability, and added goose berries to the barrels to match the hops.
6.6% ABV; 70 IBUs; extremely rare.

Emma's Pumpkin Saison, Citrouille Saison. Brewed with Garam Masala, brown sugar, torch roasted and caramelized sugar pumpkins, white sage, coriander, and mace. This fall version of the Belgian style tastes just like pumpkin pie ... If you were in Belgium. 9.5% ABV; rare.

Wild Apple Saison. A 'Co-Loveration' by two brewers inspired by their mutual sincerity for: Saison, wild yeasts, and locally grown raw materials. This crude but delicate creation was crafted with apples grown in Palisade Colorado, wild Brettanomyces, and locally grown organic flat leaf parsley. No hops were used in this Saison. 8.1% ABV; harvest rare.

You Never Even Call Me by My Name, Black Saison Regal. This recipe is an intimidating jet black color. Flavored with a blend of sarsaparilla, sassafras, coriander, hibiscus and cumin to create a perfect balance of spiciness, sweetness, and acidity. 12.2% ABV; rare.

Hopped Toddy, Saison de Miel. Inspired by chilling winter nights, this hopped braggot is made with 48% honey and 52% grains. The recipe was crafted with fresh ginger, lemon zest, Black & Orange Pekoe tea, then aged on bourbon barrels. We brew a single batch annually and cellar it for a minimum of 9 months. 13.8% ABV; very rare.

Saison Man, Saison Provisional. A 'Pre-Industry Session Saison', brewed with pilsen, rye, flaked wheat, flaked oats, spelt, coriander and grains of paradise. Fermented with a blend of Farmhouse yeast and Brettanomyces, dry hopped, and aged in Chardonnay barrels. 4.9% ABV.

Blow Up Your TV, Blanche Saison Grisette . (Black Bottle/Trinity Collaboration). An unrefined table Saison built from dynamics in grain bill featuring: Buckwheat, triticale, flaked oats, rye, vienna, wheat, and European Pilsen malts. This ale is not spiced, however, spicy notes are bolstered from the use of rye malt, Styrian Golding hops, Farmhouse yeast, and a wild Brettanomyces. A sharp and fruity flavor arises from the use of Lactobacillus to complete the delightfully refreshing and savoir-faire 'little beer'. 3.8% ABV.

TPS Report, Wild Brettanomyces Wit with Roses Petals. GABF GOLD MEDAL 2009, Bronze 2012. Brewed with flaked oats, flaked wheat, tangerine zest, and lemon zests. Fermented 100% with a very rare variety of Brettanomyces this beer is exceedingly aromatic. Aged on French Oak Chardonnay Barrels and roses petals for complex maturity and sweet earthy notes. 4.8% ABV; pH 5.0; rare.

Oh Face! Saison Provisional. The malt bill of this late 1800's inspired Belgian ale consists of a combination of barley, oats, wheat, rye and spelt. For the fermentation we use a blend of Saison yeast with three older Brettanomyces strains. This beer aged on lavender French oak Chardonnay barrels. 6.5% ABV; pH 5.2; rare.

Red Swingline, IPA Primitif. DRAFT Magazine's Top 25 Beers in the World for 2013! A wild and sour session IPA. Brewed with three heavily fruity hops, coriander, and tangerine zest the profile is definitely American in focus. Aged in French Oak Chardonnay barrels with souring Lactobacillus, funky Brettanomyces yeast, and dry-hopped in each individual barrel. This beer is a definite wow moment. 4.1% ABV; pH 3.6; 100 IBUs; rare.

Damn, it Feels Good to be a Gangsta', Black & Wild. Heavy in Roast, Chocolate, and Special B malts this beer comes off with a unique and unexpectedly dry profile. Combining two Brettas lends a milder barnyard, but heavily funky character accented by an apparent 'natural cork' flavor. Aging the beer on French oak Barrels and allowing it to properly develop, attenuation is high revealing a light body and notes of astringency. Balance is created by the addition of three special golden ingredients: Honey, Golden Raisins, and Mustard Seed. 8.1% ABV; pH 3.4; rare.

With our 7th Anniversary Project we've developed a series of 7 unique beers with the same base Saison recipe built with amaranth, lemon grass, grains of paradise, and rose hips. Each individual beer within this series is fermented from start to finish with 100% Brettanomyces and aged on French oak Chardonnay barrels. Each beer within this project is fermented with a single unique Brett, showcasing the dramatic diversity of the organism. Brettanomyces bouckaertii was isolated from a Berliner Weisse by Peter Bouckaert after 3 personal trips to Germany. Maturing much more quickly than common bretts, this yeast is a 'claussennii on steroids,' with sweaty fruit, musty cellar, soggy goat, heavy manure, wet hay, spicy cedar, and white pepper. 5.6% ABV; extremely rare.

Magical Brettanomyces Tour #4, Afro Brett. Curious about Brettanomyces? With our 7th Anniversary Project we've developed a series of 7 unique beers with the same base Saison recipe built with amaranth, lemon grass, grains of paradise, and rose hips. Each individual beer within this series is fermented from start to finish with 100% Brettanomyces and aged on French oak Chardonnay barrels. Each beer within this project is fermented with a single unique Brett, showcasing the dramatic diversity of the organism. Originally called 'Funk Weapon,' this recipe is a blend of 2 feral Bretts isolated by our friend Jeff Mello at Bootleg Biology. Living up to that name this Brett blend goes very 'funky' and aromatically musty. The essence of tropical fruit is present in the palate which is balanced nicely by a reminiscent green peppercorn spiciness and an earthy calm finish. 5.6% ABV; extremely rare.

With our 7th Anniversary Project we've developed a series of 7 unique beers with the same base Saison recipe built with amaranth, lemon grass, grains of paradise, and rose hips. Each individual beer within this series is fermented from start to finish with 100% Brettanomyces and aged on French oak Chardonnay barrels. Each beer within this project is fermented with a single unique Brett, showcasing the dramatic diversity of the organism. This recipe is aromatically citrus and sweaty, the palate is very acidic for a Brett beer which transitions to wet goat. A lovely essence of strawberry and mineral are apparent in the finish of this rustic profile. 5.6% ABV; extremely rare.

With our 7th Anniversary Project we've developed a series of 7 unique beers with the same base Saison recipe built with amaranth, lemon grass, grains of paradise, and rose hips. Each individual beer within this series is fermented from start to finish with 100% Brettanomyces and aged on French oak Chardonnay barrels. Each beer within this project is fermented with a single unique Brett, showcasing the dramatic diversity of the organism. The Farmhouse Brett turned out to be unexpectedly clean, with an extremely high attenuative and dry character. Acidity and some fruity phenols are both present, leaning the overall structure toward an old world pre-industrial Saison. 5.6% ABV; extremely rare.

With our 7th Anniversary Project we've developed a series of 7 unique beers with the same base Saison recipe built with amaranth, lemon grass, grains of paradise, and rose hips. Each individual beer within this series is fermented from start to finish with 100% Brettanomyces and aged on French oak Chardonnay barrels. Each beer within this project is fermented with a single unique Brett, showcasing the dramatic diversity of th organism. Brett anomola was first isolated in Adelaide, Australia and is well known for it’s intensity, specifically when aged. We’ll be candid here as it was our first chance to brew with this specific Brett, so we don’t know exactly what to expect. #7 will be a surprise for us all! 5.6% ABV; extremely rare.

Old Growth, Flemmish Brown. Inspired by the original Flemmish beers of ancient Belgium long periods on oak barrel create notes of green apple, lemon bar, kiwi, leather, and wet wool. 5.8% ABV; pH 2.7; extremely rare.

Brain of the Turtle, Petite Cerise. This beer is the second running on the barrels use to brew The Flavor. Aged on oaken barrels, Sumatran Coffee, almonds, and used cherries. Brain features a dark dried cherry skin tannin note and a very creamy character. 5.8% ABV; pH 2.8 extremely rare.

365 Day, Golden Sour. Brewed with a first and second 'slims' process, a malt bill consisting of over 30% raw wheat, and aged hops. This beer ages for 1 year on French oak Chardonnay barrels with Lactobacillus and Brettanomyces. 5.0% ABV; pH 3.0; very rare.

Koelorado, Spontaneous Golden Sour. Brewed with a first and second 'slims' process, a malt bill consisting of over 30% raw wheat, and aged hops. A 'first of its kind' beer to be produced in Colorado, in which we push the hot wort outside to our custom built coolship overnight allowing indigenous Colorado microbes to blow in and ferment the beer. Staying very strict to Belgian tradition, we only brew this beer during March and April when wild microbes are most favorable. This beer then ages for a full year on steam sterilized French oak Chardonnay barrels before bottling. 5.0% ABV; extremely rare.

Soul Horkey Ale , the flagship of our house brewed beers. Soul is a special recipe that combines ancient English tradition with newer Belgian influences. As a session ale built for true malt heads, this ale demonstrates the true depth and diversity of malt by blending 9 highest quality malts in a dry balance with Chinook and Kent Golding hops. 5.5 % ABV; available on draught year round.

Sunna Wit Bier, Distinct and delicate flaked wheat and oat beer. A noticeable citrus exists resulting from the addition of tangerine, lemon, lime zests, and corriander during the boil. By aging this beer on rose petals and fermenting it with 50% Saison yeast, we create signature earthy and spicy notes 4.8% ABV; available on draught year round.

Flo India Pale Ale, a staff and regulars favorite of our publik house. Brewed with a blend of eight hop varieties and seven world class malts this dry hopped ale combines both English and American brewing traditions. The resulting beer is driven by fruit and balanced by dry palate, a true treat for the bold fans of the hoppier side of beers. 6.4% ABV and 64 IBUs; available year round on draught.

Awaken Chicory Coffee Stout. A dark, creamy, and surprisingly drinkable Dry Stout. As you would expect from the brewers at Trinity, this Stout is anything but mainstream. Starting the base recipe with ten malts and three hop varieties, we age the resulting dry stout on locally roasted earthy Sumatran coffee beans and Chicory to create balanced and pleasing bitter notes. 6.0% ABV; available year round on draught.

Farmhouse Saison, a seasonally changing beer dictated by freshly available herbs, spices, fruits, grains, seeds, and vegetables. Adhering to the style's age old custom we completely change the recipe of this beer each time we brew it in an effort to push our talented Brewer's creativity to the limit! Depending on the time of the year we brew this beer from straw gold to jet black in color. Each of our 12+ rotating annual batches are available only once, catch the ghost while you can! 3.0%-12.5% ABV; extremely rare draught availability by batch.

Slap Yer Mammy is a shocking Double IPA! Coming in at 10.5% ABV this huge ale is brewed with 7 of the highest quality malts and 9 varieties of hops! On our 125 minute boil we pack in 125 IBU's, making this one of the hoppiest beers ever brewed in the world. If that's not enough hops, then just wait! Unlike any of our other beers, we dry hop this one twice to pack in as much aroma as possible! A truly shocking Double IPA all you Hopophiles. 10.5% ABV. Available year round on draught.

Chi Belgian Pilsener is a traditional bottom fermented lager beer. As expected with any Trinity brewed beer, we add a twist to what is would be considered normal for a Pilsener.. we super hop this recipe with Belgian Styrian Goldings creating a spicy and dry profile. Built as a session beer for any situation, every season, and to pair with any food; this hoppy lager will quickly become a standard choice in every occasion. 5.1 % ABV and 51 IBU's. Available year round on draught.

Chocolate River, Imperial Stout. Just in time to keep you warm during the colder months of winter! It's body is huge, it's dark malt character is huge, it's hop profile is gigantic, and it's ABV is enormous. It's basically everything that you would expect from a noteworthy Imperial Stout,and more! We brew this beer with rich milk chocolate then age it on whole Madagascar Vanilla Beans and Dagoba Cacao Nibs. 11.0% ABV; extremely rare.

45th Parallel, Oregon-Style IPA. A completely new delivery for IPA, not to be confused with 'West Coast.' We've re-kindled our affection for this lovely ale inspired by fresh new ideas unique to brewers from the state of Oregon. This IPA recipe is hopped the entire way through with very progressive and extremely fruity American hops, then brought to a balance with a humble malt that reveals a delicately plucky caramel. Both very intense but extremely approachable, this beer reigns as our 'Ironic Masterpiece.'
7.5% ABV; 80 IBU's; extremely rare.

Wee Banshee, Irish Heather Ale. Our release date for this ale is of course St. Patricks Day. Using ingredients directly from the isle we brewed up a historically authentic ancient beer. Victory and Vienna malts create a toasty profile that is balanced by a lightly sweet caramel note. European noble hops add a dryness and drinkability to the ale while balancing and supporting the complex malt undertones. Separating this ale from all Irish reds, Heather Tips bring us back to ancient and medieval brewing times. Bringing a little bit more of the isle into this ale we add a very small amount of sea salt and seaweed to the boil. 7.0% ABV; rare.

Houdini Hopper, Fresh Hop. Our newest harvest focused recipe, the Houdini Hopper is a wet hop ale done with 100% Simcoe. Crafted in honor of brewer Tom Brown's late and loved dog. The malt body of this beer has the structure of an IPA, with light toast and carmel notes to support the hops in this beer. Very drinkable and never grassy, this beer quickly became a favorite seasonal. 6.4% ABV; rare.

Farmhouse Soleil, Saison d'été. Inspired by sunlight, this Saison has a toasty and dry malt profile followed by a surprisingly even body. We switched up the hops on this beer, using American Grown Simcoe producing a passion fruit flavor intertwined perfectly with lemon and lime fruits, while finishing spicy/dry from both a ginger and green pepper corn addition.

Layer Cake Goes-uh. Crafted with a large emphasis on full mineral richness, constructed through combining 4 rare artisanal salts: white truffle, pink Himalayan, Alea Hawaiian red, and Kala Namak Indian Black. Further than the salts, it's a golden wheat beer style that is lightly soured for authenticity and complexity. A delicious and unique palate experience.

Super Juice Solution. Soured with Lactobacillus delbrueckii and complimented with heavily fruity American hops. We use a touch of coriander to reinforce the citrus theme of this beer. Although no fruit is used, this specialty IPA structure drinks refreshingly juicy and extremely session-able.

Farmhouse Walloon, Saison d'jardin. Inspired by the ancient and more authentic Saisons of southern Belgium. We gather the ingredients for this recipe from our own small Eco-region, and strictly only use ingredients from local farms and gardens. Each year we use a number of unique pumpkins and squashes along with a number of unpredictable ingredients that arrive with harvest to create the creamy and very drinkable indigenous interpretation of this Belgian style. Voted in the top 15 Saisons in the world in 2009 on ratebeer. 5.0% ABV; rare.

Farmhouse Petite Fete. We've always wanted to brew a Saison with crannberries, and there's nothing stopping us :) ! The berries in this beer add a firm astringency, highlighted with seasonal adjuncts.
