Soul Horkey Ale , the flagship of our house brewed beers. Soul is a special
recipe that combines ancient English tradition with new Belgian ideas. As a
session ale built for true malt heads, this ale demonstrates the true depth and
diversity of malt by blending 9 highest quality malts in a dry balance with
Chinook and Kent Golding hops. 5.5 % ABV, available on draught year round by
request; $124.95 ½ bbl.

Sunna Wit Bier, Distinct and delicate flaked wheat and oat beer. A
noticeable citrus exists resulting from the addition of tangerine, lemon, lime
zests, and corriander during the boil. By aging this beer on rose petals and
fermenting it with 50% Saison yeast, we create signature earthy and spicy notes.
4.8% ABV, available on draught year round by request only; $124.95 ½ bbl.

Flo India Pale Ale, a staff and regulars favorite of our public house.
Brewed with a blend of eight hop varieties and seven world class malts this
dry hopped ale combines both English and American brewing traditions. The
resulting beer is driven by fruit and balanced by dry palate, a true treat for the
bold fans of the hoppier side of beers. 6.3% ABV; available year round on
draught by request only; $129.95 ½ bbl.

Farmhouse Saison, a seasonally changing beer dictated by freshly available
herbs, spices, fruits, grains, seeds, and or vegetables. Adhering to the style’s age
old custom we completely change the recipe of this beer each time we brew it
in an effort to push our talented Brewer’s creativity to the limit! Depending on
the time of the year we brew this beer from straw color to jet black. Each of our
12+ rotating annual batches are available only once, catch the ghost while you can!

Awaken Coffee Stout. A dark, creamy, and surprisingly
drinkable Dry Stout. As you would expect from the brewers at Trinity, this
Stout is anything but main stream. Starting the base recipe with ten malts and
three hop varieties, we age the resulting dry stout on locally roasted Sumatran
coffee beans and Chicory to create balanced and pleasing bitter notes. 6.0% ABV

Farmhouse Nocturnum, is a member of the new family of strong
Belgian ales know as “Super Saisons.” The name Nocturnum is inspired by the
intimidating jet black color of the beer. Spiced with a blend of sarsaparilla,
sassafras, rosemary, coriander, hibiscus and cumin for a perfect balance of
spiciness, sweetness, and acidity. At 12.5% ABV, this Saison was once
the strongest locally brewed spiced Belgian ale. 12.5% ABV; extremely rare; limit

Pappy Legba. Brewed with just a touch of flaked maize for a seductive
and creamy texture, this crimson Saison is undeniably focused on fruit. Post
fermentation this special Belgian is aged on a grip of pie cherries, lending it more

Farmhouse Beach House. A Saison Inspired by longing for patios and
extended days of sunlight. This golden Saison pairs the spiciness of Grains of
Paradise with fresh bananas and cocao nibs. Although the weather is still a little chilly, this beer will remind you of days on the beach in Cancun. 13.0% ABV; extremely

Wee Banshee Irish Heather Ale. Our release date for this ale is of course
St. Patricks Day. Using ingredients directly from the isle we brewed up a
historically authentic ancient beer. Victory and Vienna malts create a toasty
profile that is balanced by a lightly sweet caramel note. European noble hops add
a dryness and drinkability to the ale while balancing and supporting the complex
malt undertones. Separating this ale from all Irish reds, Heather Tips bring us
back to ancient and medieval brewing times, adding a very pleasant and soft floral
echo. Bringing a little bit more of the isle into this ale we add a very small
amount of sea salt and seaweed t0 the boil. 7.0% ABV, extremely rare; limit #1

Farmhouse, Three flower Saison. Again going back to the earth
with this version of our seasonal Belgian, we age this orange hued ale on the tops
of three varieties of flowers. We promised not to give up our secret on this
beer, because it’s just too good of a secret! Authentically Belgian and only available
as the weather warms and flowers begin to appear. 7.0% ABV, extremely rare;

Emperor Wears No Clothes . Ahhh, the weather is warming again
and spring is in full swing. Sandals, hammocks, and daydreaming with beers on
patios has returned. In celebration of season of birth and the season of earth
we’ve prepared a new 420 Saison that features a hemp seed addition to the mash

Farmhouse, Saison Grito. Brewed in the celebration of our southern
neighbor’s independence. This mexo-belgo hybrid incorporates traditional
Saison brewing techniques with spices this style has never seen. The cumin,
cilantro, lemon, lime, roasted big Jim Peppers, and yellow corn additions truly
make this seasonal a fiesta in your mouth! 5.5% ABV, extremely rare; limit #1

Southern Hospitality, Pecan Pie Beer. Although we live in Colorado
everyone still appreciates a little bit southern hospitality, and we are here to
deliver. Brewed with all the ingredients from a pecan pie including: Fresh
roasted pecans, brown sugar, whole cinnamon sticks, and fresh Madagascar
Vanilla beans. Since this is a beer we do leave out the eggs and butter that you’d
expect in a pecan pie, but we do load our mash tun with ample sweet caramel
malts. Served with or without ice cream! 5.5% ABV, extremely rare;

Libidinous, San Hop Saison The first in our rotating release of
specialty single batch beers! Brewed without hops, we flavored this specialty
with heather tips, juniper berries, chai, and saffron. More of an ancient Gruit

Slap Your Mammy is a shocking Double IPA! Coming in at 10.5%
ABV this huge ale is brewed with 7 of the highest quality malts and 9 varieties
of hops! On our 125 minute boil we pack in 125 IBU's, making this one of the
hoppiest beers ever brewed in the world. If that's not enough hops, then just
wait! Unlike any of our other beers, we dry hop this one twice to pack in as
much aroma as possible! A truly shocking Double IPA for all you Hopophiles.

Farmhouse, Fantôme. Our brewer has been in loose contact with
Dany Prignon of the world famous Saison Fantôme. Through this contact we’ve
learned a few secrets about how Fantôme is brewed. Maybe we used some in
this recipe of Farmhouse, or maybe we did . Ok we DID ! We aren’t going
to say what those secrets are but we will say this Farmhouse was brewed with
both strawberries and sweet potatoes! 6.5% ABV, extremely rare; limit #1

Didgeribrew, Wild Saison. Loving Wit Biers so much, we
decided to make our third interpretation of a hybrid of the style. Brewed with
the base malt structure of a Belgian Wit, this beer quickly gets funky. We
ferment this treat with a special and rare strain of the wild yeast Brettanomyces.
This special yeast creates notes of barnyard, wet wool, and even green apple!
After fermentation the batch is aged on a grip of fresh kiwi fruit, again imparting
an even higher level of tartness than expected. 4.8% ABV, available on draught

Kinky Reggae, Jamaican Jerk Beer. Jamaican "jerk" spice blends well the
cultural origins and traditional cooking methods of many indigenous peoples
native to the Caribbean. A Spice blend most famous for the heat it brings from
scotch bonnet peppers also includes cloves, cinnamon, nutmeg, and thyme. This
ale turned out spicy hot but also reminiscent of a winter/Christmas beer. We
know you will love it. 6.0% ABV, extremely rare; limit #1 keg; Available

Farmhouse, Saison Du Baze. Brewed annually as a light and refreshing
summer time Belgian. Straw in color and dry, this ale is flavored with the
addition of fresh Colorado grown Palisade apples. The pleasant apple flavor is
soft and reminiscent of traditional Saison yeast esters. The use of chicory in this
recipe creates an essence of coffee and dryness that is again reinforced by the
addition of grains of paradise. We recommend enjoying this beer while enjoying
the view of Pikes Peak from our patio. 5.5% ABV, extremely rare; limit #1

Farmhouse ‘Peche Noir’ Saison . We’ve all had a beer made with
peach or apricot before, but this is not your froo froo try to be a soda beer! This
black Saison is brewed with dark malts, brown sugar, grains of paradise, and
aged on fresh peaches. We know you will enjoy this harvest treat! 7.0% ABV,

Farmhouse Café Blanc . Our friends at Colorado Coffee merchant
were a huge help on this beer. We’ve been wanting to do a Saison with ‘white
coffee’ for quite some time, we just couldn’t source the very lightly roasted bean.
Harry of CCM roasted a special batch of white coffee just for this brew! Why
white coffee you ask? The answer will be obvious when you taste the beer. The
unique nutty and earthy flavors pair perfectly with what’s expected in a Saison.
To round off the beer we aged this batch on fresh vanilla beans too! 7.0% ABV,

Cherry Awaken Stout. Everyone knows our Awaken Stout and how deliciously the coffee and chicory flavors we
add mix with the profile of a good stout. For our third year in a row we will be tapping kegs of Awaken Stout aged
on Cherries on Chirstmas Eve. We age our stout on over 1 lb of Montmorency Pie Cherries per pint for the very special occasion.
These kegs of chocolate cherry nitrogenated heaven are the only kegs of Cherry Awaken we will tap this year. In 2010 we set a
record by blowing both kegs in 36 minutes!!! Our goal in 2011, drain the kegs in under 36 minutes!! 6.0% ABV ; available on
site by the glass only December 24.

Chilly Water Baltic Porter. Not a common style of beer by any means, in fact this
style of Porter is a Bottom fermented lager rather than an ale. Traditionally brewed in
Northern Europe, this lager had to be strong to keep all the hearty northern souls warm. Again
keep in mind this beer is brewed by Trinity and any beer we make will always have an added twist.
The twist in this winter seasonal is the choice to age the beer on some rare Mexican wood known
as Cauchalalate. This wood imparts a certain dryness accompanied by chocolate and coffee flavors.
We think this unique wood is the perfect match for the style, and we know you will agree! 8.5% ABV;

Passed Stout , Imperial Stout. Just in time to keep you warm during the
Colder months of winter! It’s body is huge, it’s dark malt character is huge, it’s
hop profile is gigantic, and it’s ABV is enormous. It’s basically everything that
you would expect from a noteworthy Imperial Stout, and more! We age this
beer on fresh Madagascar Vanilla Beans, Dagoba Cacao Nibbs, and French Oak.

Farmhouse Walloon, is inspired by the ancient and more authentic
Saisons of southern Belgium. We gather the ingredients for this
recipe from our own small ecoregion, and strictly only use
ingredients from local farms and gardens. Each year we use a
number of unique pumpkins and squashes along with a number of secret ingredients to create the creamy and very drinkable indigenous
interpretation of this Belgian style. Voted in the top 15 Saisons in the

Stop Making Sense, Eis Bock. In old German tradition, this style of
Lager was developed by accident when aging a batch of Doppel Bock in barrels
and in caves. The temperature of the caves dropped low enough to partially
freeze some of the water contained in the beer, hence giving birth to a new style
of beer. Eis bocks are the strongest traditional German beer, thanks to the
freezing of the beer. This process of freezing the beer also concentrates malts
and hops, making those flavors even more intense! 11% ABV; extremely rare,

Old Growth, Flemmish Inspired Wild Brown. Aging this beer on oak for any where between 6-18 months on wild bacterial/yeast
spiked oaken barrels creates a heavily malic and tart brown ale. Inspired by the original Flemmish beers of ancient
Belgium this extremely rare bottle has notes of green apple, lemon bar, kiwi, leather, and wet wool. This beer has
been rated in the top 2% of the beers in the entire world since we released it back in 2008. 5.8% ABV; extremely

Farmhouse Provisional, ancient wild Saison. If you ever wanted to
time and space travel to rural southern Belgium during the 1800’s, this is the beer
to do it with. The malt bill consists of a combination of barley, oats, wheat, rye
and spelt. For the fermentation we use a blend of Saison yeast with wild 3
Brettanomyces strains, then we spice this beer with lavender and age it on French
oak. 6.5% ABV; extremely rare; limit #2 cases; available late Febuary. $215.00 case.

TPS Report, Experimental Flanders Sour. If you love the funky side of
Belgium then you will love our TPS Report. The grain bill for this beer includes flaked oats and
flaked wheat, and the recipe is flavored with tangerine and lemon zests. Fermented 100% with a very rare
variety of the wild yeast, Brettanomyces, this beer is the funky funky farmhouse, wet wool, and heavy leather
that we’ve all grown to love. Bottled once a year and triple fermented for authenticity. GABF GOLD MEDAL 2009,

The Flavor, Triple Cherry Dark Sour. Yes, we have done it. We’ve
combined all of the complex flavors of dark malt with: coffee and three varieties
of cherries. We then aged this beer on our sour barrels for long periods of time
to create our most coveted and complex bottle. Huge cherry and malic are
balanced with roast and chocolate malts while subtle green apple, barnyard,
leather, and coffee dance throughout the palate. 5.8% ABV; extremely rare; limit

Brain of the Turtle”, Our Petite cerise is the second running of
the massive amount of cherries we use to brew The Flavor. Aged on oaken barrels, coffee,
almonds, and cherries, this special beer features a notable earthiness, distinct barnyard,
