Wed 4/8 the second of our 7th anniversary Series of 'single brett beers' Magical Brettanomyces Tour #2, Brett brux. Curious about Brettanomyces? With our 7th Anniversary Project we've developed a series of 7 unique beers with the same base Saison recipe built with amaranth, lemon grass, grains of paradise, and rose hips. Each individual beer within this series is fermented from start to finish with 100% Brettanomyces and aged on French oak Chardonnay barrels. Each beer within this project is fermented with a single unique Brett, showcasing the dramatic diversity of the organism. This Brettanomyces bruxellensis version is heavy with a drying leather bitterness, light nuttiness, and farmhouse wool blanket. 5.6% ABV; extremely rare.
Friday 4/10 Release of Mr. Saison, Saison Vieille. Inspired by native ingredients we found during a local hike in Colorado, this beer won best of show in the "Beers Made by Walking" competition in 2012. Our use of amaranth grain imparts a toasty presence in the malt bill, mustard seed lends a nice spiciness to the beer that is balanced with a light citrus from lemon grass and an implied dried cherry essence from the use of rose hips. 5.6% ABV

Friday 4/17 Release of Farmhouse Soleil, Saison d'été. Inspired by sunlight, this Saison has a toasty and dry malt profile followed by a surprisingly even body. We switched up the hops on this beer, using American Grown Simcoe producing a passion fruit flavor intertwined perfectly with lemon and lime fruits, while finishing spicy/dry from both a ginger and green pepper corn addition.
Friday 4/24 We release the first spontaneous Koelschip beer brewed to 'Royal Decree,' in Colorado!!! Limit 6 bottles per customer! Koelorado, Spontaneous Golden Sour. Brewed with a first and second 'slims' process, a malt bill consisting of over 30% raw wheat, and aged hops. A 'first of its kind' beer to be produced in Colorado, in which we push the hot wort outside to our custom built coolship overnight allowing indigenous Colorado microbes to blow in and ferment the beer. Staying very strict to Belgian tradition, we only brew this beer during March and April when wild microbes are most favorable. This beer then ages for a full year on steam sterilized French oak Chardonnay barrels before bottling. 5.0% ABV

Monday 4/13 CBC Kick off @ Beer Mongers !!! Trinity will be pouring Koelorado, 3 Flowers Saison Vielle, and 45th Parallel Oregon-Style IPA. 7venth Sun and Green Bench from Florida will be tapping a handful of delicious beers, along with Collabs we did together. This event will be Electric !!
Tuesday 4/14 Cascade Barrel House Sour Invitational !! Join us for an evening to remember as we will be sharing very rare bottles of Koelorado Spontaneous, 365 Day Golden Sour, and special bottles of Red Swingline aged with mircale berries (in the bottle).
Thursday 4/16 Interurban, an evening with Trinity Brewing and Alesmith!! no reason to pay attention to this, just move along. We'll be tapping Koelorado Spontaneous, Magic Brett Tour #1 (Drie), and our Wild Apple Saison!
